I was in Montgenevre over New Year and have skied there every year for a good ten years and watched as new lifts have sprouted up to make the huge mountain area even more accessible. The main ski area can get a little busy in peak season times but the lifts are extremely fast so you don't have to spend too much time queuing. If things do get a little crowded, the opposite side of the mountain is always quieter and a dream in fresh powder. Also, if you have included it on your lift pass, you can ski across to Claviere (Italy) very easily. The Colletto Verde black run into Italy has a very steep imposing start which is not for the faint hearted but it does level out into a fantastic long run.
If you are traveling on a tight budget, take a packed lunch!!!!! The one and only mountain restaurant is a rip off! We always ski back down to resort and head to the 'Outside Burger Bar' where you can get a lovely, fresh burger for around 5 euros. Its very popular though so have an early or late lunch to avoid waiting too long.
The Graal pub has a happy hour from 5-6pm if you fancy some apres ski. If you are up for a late night and a boogie, head to the Blue Night club but again, don't expect to come home with any money in your pockets as drinks cost a fortune!
