Kaiserpark Ellmau - Funpark is worth building into the day if you are travelling with teenagers or confident younger skiers. It adds a fun, official freestyle stop without needing to leave the Ellmau - Going sector.
Speedstrecke Almbahn is a neat target for sportier skiers. It is not a full-day attraction, but it gives a memorable burst of pace between regular piste runs.
Use Hartkaiser as a viewpoint, not just a lift hub. On clear days, the panorama towards the Wilder Kaiser is one of the best reasons to base yourself in Ellmau.
The Astberg toboggan run in Going/Ellmau is a strong non-ski option. At 4.5 km, it works well as an afternoon or evening activity, depending on seasonal opening times.
If you plan a longer SkiWelt circuit, leave enough time to return to Ellmau. The area is large, and the day is more enjoyable when the final links are not rushed.
A good holiday rhythm is one local Ellmau - Going day, one bigger SkiWelt mileage day, and one off-ski session on the Astberg toboggan run. That gives you variety without overcomplicating the trip.
